Description

You might think that all Italian food is very high in calories and fat, but this cookbook shows that it is possible to enjoy all the flavours of Italian cuisine while maintaining a healthy, low-fat eating plan. This innovative new volume contains a dazzling selection of recipes from all over Italy, including traditional favourites and contemporary classics, all of which are deceptively low in fat or which have been cleverly converted to tasty low-fat or no-fat versions.

The book begins with a section on healthy eating, with information about the role of fat in our diet, as well as suggesting ways to cut down on fat. A substantial ingredients section provides a full-colour visual guide to all the main Italian ingredients, with special guidelines or substitutes given for those that have a high fat content.

Included in the recipe section are classic Italian soups such as minestrone, starters such as pepper dips and pates, and salads such as a colourful insalata tricolore. For the main course there are fresh and cured meats, fish, vegetables and surprisingly low-fat pasta dishes, accompanied by delicious Italian breads. There are also healthy desserts such as fruity baked dishes and sorbets.

You will be surprised and delighted at this tempting collection of recipes, proving that you can enjoy all the wonderful flavours of Italian food as part of a healthy, low-fat diet.
